Make-Ahead Banana Pancakes

Frozen, store-bought pancakes take up a lot of space inside a small RV refrigerator and they’re loaded with preservatives! But everyone loves pancakes, and they’re great to have on crisp mornings at your campsite picnic table. We’re not suggesting that you give them up, we’re just offering up the idea of making your own ahead of time so you can enjoy healthy, homemade pancakes. Give these make-ahead banana pancakes a try on your next camping trip and start the day off right!


  • 2 C. all-purpose flour
  • 2 Tbsp. white sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 C. buttermilk
  • 2 eggs
  • 3 ½ Tbsp. melted butter
  • 2 tsp. pure vanilla extract
  • 2 small ripe bananas, mashed


  1. In a medium bowl, whisk together the buttermilk, mashed bananas, eggs, vanilla, and butter.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. While your griddle is heating, add the wet mixture to the dry mixture and stir with a fork until blended. You want it to be a bit lumpy.
  4. Scoop about ½ cup of the mixture per pancake onto the griddle and cook until the bubbles start to pop and the bottom is slightly browned.
  5. Flip and cook until this side is browned and pancake is done in the middle.


You don’t want to just stack them up and throw them in the freezer. The moisture in them will cause them to stick and then you will not be able to take them apart when they’re frozen.

  1. Line a baking sheet with waxed or parchment paper.
  2. Lay the pancakes out on the baking sheet and place them in the freezer.
  3. Once they are completely frozen you can stack them up and place them in a freezer bag.

Now just throw them in the RV freezer and you’re all set for breakfast! You can warm them up in the microwave, toaster, or even over the campfire!
